My New Knife

Anita bought a gift for me, and Cindy brought it in her luggage. It’s a lovely new chef’s knife. See how pretty it is?

About six weeks ago, Anita discovered that she loves my guacamole. (It’s a very simple recipe, but she insists that it’s “Will’s Special Guacamole” — so sappy.) She craves it constantly, and always brings home avocados from the store. Making the guacamole is easy, but Anita likes the onions diced small. And my best knife was a serrated knife.

To cut the onions, I would move it back and forth. It’s such a simple machine, I don’t have to use force.

Nevertheless, the serrated edge would mash Knifethe onions rather than dice them, and leave some parts held together by a bit of translucent skin. Enter my new chef’s knife, and voila: Dicing Bliss.

It’s an aspirational purchase. In other words, my cooking skills are not worthy of this knife. I need to learn how to dice properly, first. I must become One with the knife. I will not control the knife, but I will be responsible for what it cuts. I will wield the knife when my thoughts are pure and full of beauty. Only then will I mince the garlic.

    Hi Will, I can confirm that you will most likely achieve a zen-like state with your new kitchen implement. In the last couple of years, the responsibility of kitchen duty has shifted from my mother to my father (a change my mother has welcomed gladly). When I visit with them, I marvel at how “into” the zone my Dad gets while lording over the kitchen. I’ve even begun to buy him gadgets and implements of beauty and he rhapsodizes about each one. After watching him, I really believe you can become One with the knife. Good luck (keep you digits tucked away so your god-like knife does not take a blood sacrifice)! -Jaime

    Is that a Cutco knife? Beautiful!! Not that brands or labels are important to me, but I recognized the handle and I do love my Cutco knives. Just a little jealous…

    Yep, it’s a Cutco. We bickered about who would use the serrated knife that we bought a few years ago. The only problem: our oldest ones need sharpening. Cutco has some kind of lifetime sharpening deal, but I bet it isn’t good for overseas!

    The sharpening should be good overseas, you will just have to pay the shipping fees, they are also planning on opening offices over seas between now and 2009 I think.
